The highlight of this year's buffet is the 'Ayam Bakar Tempayan', a traditional slow-roasted chicken dish that is cooked in a clay oven with charcoal at 170°C. The result is a smoky, earthy flavor that is both tender and delicious.
The chicken is marinated in five different varieties of special marinades - Rosemary Garlic, Honey, Lemon Basil (Kemangi), Percik, and Five Spice - for a day before cooking.
