To rekindle this time-honored craft and nurture a new generation of skilled butchers, the Aussie Meat Academy, supported by Meat & Livestock Australia, organized the Ultimate Young Butchers Challenge at Culinaire Malaysia 2023, held from September 19 to 22 at the Kuala Lumpur Convention Centre. This event not only celebrated the butchery profession but also set a benchmark for its future.

Professional butchery transcends the mere act of cutting meat; it encompasses a broad range of skills. Butchers are artisans who excel in deboning, breaking down primal cuts into various portions suitable for grilling, stir-frying, or even creating delicacies like yakiniku, shabu-shabu, and sausages. They master the art of marination and value addition, ensuring that every cut of meat is a culinary delight waiting to happen.

For retail butchers, the responsibility extends to presenting meat attractively in chiller counters, efficient price labeling, reducing wastage, and increasing yields. They must offer convenient and practical meat products to satisfy consumers' needs.

In the realm of food service butchers, the challenge is to meet the exacting standards of hotel dining. While the costs of hiring butchers have risen, hotels with multiple restaurants still require skilled butchers. These professionals must excel in meat cutting, deboning, marination, sausage making, dry aging, and preparation for various cooking methods. Their goal is to ensure that the meat is ready for the chefs to transform into dishes that delight the taste buds of discerning customers.

The Ultimate Young Butchers Challenge organized by the Aussie Meat Academy was a highlight of Culinaire Malaysia 2023. It brought together 24 participants from Malaysia, Singapore, Indonesia, and Taiwan, all aged 38 or below with at least one year of butchery experience. The competition demanded not only precision but also innovation.

Participants were tasked with breaking down an Aussie Lamb and Beef primal cut into sub-primal cuts while proposing ideas suitable for food service and retail. Additionally, they had to prepare a Western or Asian main course, presented in a Western-style, among other requirements. The competition unfolded over four intense sessions spanning two days, with winners announced during the FHM Closing dinner on September 22.

The top three butchers emerged with impressive prizes. Liao Ci-Hong of Yun Chang Beef Restaurant, Taiwan, secured the championship and received RM3,000 along with a trophy. The first runner-up, Lai Chih Lun of Gourmet’s Partner, Taiwan, was awarded RM2,000 and a trophy, while the second runner-up, Mohd Zamri Bin Mohd Ramli of TFP Retail Sdn Bhd, Malaysia, received RM1,000 and a trophy.

Despite misconceptions that butchery offers no promising career path, the truth is quite the opposite. Many butchers have climbed the ranks to become Executive Chefs and Store Managers. The skill set of a butcher is highly sought after, especially in the retail industry, and neighboring countries like Singapore continually seek skilled butchers.

This competition not only showcased the expertise of young butchers but also served as a reminder of the importance of this profession.
